Friday Food Porn: Spinach, Potato and Havarti Frittata

I needed to step away from the computer - to spend some time slicing, engaged in another sort of reverie. The pantry was near bare; and with a looming trip to Atlanta, shopping was futile.

So a scroungy potato, a quarter bag of wilted spinach, leftover cheese, and some eggs bought as binders for my black bean and corn burgers …. well, these motley ingredients tranformed into dinner deliciousness.

Thin potato rounds were briefly boiled, then lovingly sautéed in olive oil, butter, garlic and jalapeño. Organic baby spinach wilted under the garlic’s heady embrace.

Free range eggs joined chopped cilantro and red pepper flakes; whisked together into fluffiness, then poured over potatoes, spinach, and havarti cheese spiked with dill.

Low heat coaxed the eggs into springy, firm resistance, melting cheese. A flip onto a plate and back into the pan - and a few moments later, my fritatta was done; ready for more cilantro, crumbles of feta, and its closeup.

    Wow, how’d you get it to look that good?! When I try to make fritattas, they end up looking like frit-someone-sat-on-tatas…

    yeah, usually mine look pretty crappy too. this one was over low low heat. i think the key is to let the eggs settle to the bottom on their own, vs. stirring them when they are first introduced to the pan. And I can’t believe I nailed the flip, either.
