Plan B: Keeping the Plates Spinning

In case you were wondering: did I get rich running an underground restaurant … well, the answer is no.

My Plan B after the 2007 Collapse of Journalism was actually less lucrative than working as a reporter!

By day I worked on rogueApron — networking with potential hosts, writing web copy, creating recipes and managing press inquiries. And by night, I worked in the kitchen at Atlanta’s finest gastropub, The Brick Store.

The three gentlemen who run that bar were incredibly supportive of my underground restaurant dreams - working around the once-monthly dinner schedule, and occasionally letting me borrow some space in the walk-in.

My time in the kitchen continues to influence me to this day. I learned how to organize, learned how to triage, and learned how to keep my cool when things heat up.

#EconomyofMotion #EmpowerEveryone  #Triage

And yes, I had a habit of tweeting sleep deprived line cook poetry in the middle of the night.
